Ingredients

  • 1 cup granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup fresh orange juice
  • Zest of 1 orange
  • Orange food coloring (optional, for a brighter orange color)

For the Orange Sauce:

  • 1 cup orange juice
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Orange food coloring (optional)

For Decorating (Optional):

  • Whipped cream
  • Halloween-themed decorations (candy corn, edible googly eyes, etc.)

Method

  1. Preheat your oven to 325°F (160°C). Grease a 9-inch (23 cm) springform pan and set it aside.
  2. In a medium-sized mixing bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted Ór-Real Irish Butter. Mix until the crumbs are evenly coated with butter.
  3. Press the crumb mixture firmly into the bottom of the prepared springform pan to create the crust. Use the back of a spoon to ensure it's compacted evenly. Place the pan in the refrigerator while you prepare the filling.
  4. In a large mixing bowl, beat the softened cream cheese until it's smooth and creamy.
  5. Gradually add the 1 cup of granulated sugar to the cream cheese, mixing until well combined.
  6. Add the eggs one at a time, mixing well after each addition.
  7. Stir in the vanilla extract, fresh orange juice, and orange zest. If you want a brighter orange color, add a few drops of orange food coloring and mix until evenly distributed.
  8. Pour the cheesecake filling onto the prepared crust.
  9. Tap the pan on the countertop to remove any air bubbles and ensure a smooth surface.
  10. Place the springform pan in a larger baking dish and fill the larger dish with about 1 inch of hot water. This helps prevent the cheesecake from cracking while baking.
  11. Bake the cheesecake in the preheated oven for about 50-60 minutes or until the edges are set, and the center is slightly jiggly.
  12. Turn off the oven and crack the oven door slightly. Allow the cheesecake to cool in the oven for about an hour.
  13. After cooling, remove the cheesecake from the oven and refrigerate it for at least 4 hours or overnight to set.
  14. While the cheesecake is chilling, prepare the orange sauce. In a saucepan, combine the 1 cup of orange juice and 1/2 cup of sugar. Heat over medium heat until it begins to simmer.
